Ingredients

  • 1/2 medium cabbage shredded finely (about 400–500 g or 1 lb of cabbage)
  • 3 green onions chopped (greens and white parts)
  • 3 large eggs
  • 1 tablespoon apple cider vinegar ACV or coconut vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 4 tablespoons olive oil for richer flavor and moisture

Instructions

  • Shred the cabbage finely and squeeze out excess moisture using a clean towel or cheesecloth to ensure it is dry.
  • In a large mixing bowl, combine the shredded cabbage, chopped green onions, eggs, apple cider vinegar, sea salt, and ground black pepper.
  • Stir in the coconut flour and baking soda until well combined. The mixture should be thick and hold together.
  • Brush a baking dish with olive oil or line it with parchment paper.
  • Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  • Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the Cabbage Pie Delight to cool for a few minutes before slicing and serving.
